環境設定→システム→アンドゥで割り当てられている最大使用メモリの量はどれぐらいですか?
仮に100MBが設定されているとして、扱っているデータサイズが100MBを超えるようだとアンドゥを100回に設定していても一回しか戻れません。

なので扱うデータに対して十分に余裕のあるメモリを割り当てないとアンドゥがきかなくなります。
